In this edition of our Healthy Holidays blog theme, it’s about cleaning up a misconception. Namely, the belief that, as the winter holidays approach, there isn’t much in the produce aisle worth consuming. While it’s true the summer months have the most in-season fresh produce available, it’s not true that the rest of the year is a black hole of healthy fare.

The cautionary tale here is don’t take nutritious, in-season winter fruits and veggies and transform them into sugary, salty, fatty versions of themselves. Sweet potatoes don’t need marshmallows to be delicious, Green beans are more enjoyable sautéed in fresh garlic and olive oil than they are drowning in processed soup. And, pureed pumpkin has tons of other uses besides being put into a pie crust.
